We recently went on a honey spree not far from where we live, at the Grande Epicerie. They have a pretty nice selection of honeys including Hédène. Does this name rings a bell? It sounds like Eden in French. It’s not only poetic but also pretty flavorful, we went with the fir honey which has very strong coniferous aromas. It’s not well suited for your morning toast but it goes perfectly with Cantonese style pork ribs. The story of the founders is surprising too, two young professionals who gave up their jobs to become beekeepers, that’s unusual, isn’t it?
