There has been a lot of expectations about Haï Kaï, a brand new restaurant that opened near the Canal Saint Martin in Paris. The chef is Amélie Darvas, she worked at Le Bristol and l’Ami Jean, two classic French institutions.
But Haï Kaï is much different, the flavor combinations are extremely creative. The result is unsatisfying. I started with the calf meatbreads with clams, it’s very well cooked and the flavors match perfectly. My friend had the burrata which was over-salty.
Then, I had the Basque veal with squids and leeks. The meat is amazing, I’ve rarely veal that was cooked that well. But the whole dish had no coherence: the squid and the leeks were kind of lost, still wondering why they had been thrown on this plate. My friend had the meagre: it was terrible. The texture was meaty and the flavor had flown away. It came with pan-fried foie gras, again a surprising choice.
All in all, we’re not big fans of the cuisine at Haï Kaï, maybe we had too high expectations. The price tag doesn’t help: about €40 each (drinks not included).
